Stuffed Flank Steak (select ‘recipes’  under “select a category” to see more recipes)

This is a FABULOUS recipe!  I’ve made some adjustments to the original, so that I think I can call it my own!  It’s so easy, makes a huge impression, and tastes totally yummy.  Try it!

1 cup loosley-packed Italian parsley

1 cup loosley-packed cilantro

1T. finely shredded lime peel or zest

3 T. olive oil

3 minced garlic cloves

1 Flank steak

1.  Snip and mince all the parsley and cilantro.

2.  In a small bowl, combine 2 T. of parsley and 2 T. of cilantro, 1/2 t. zest, 1 T. olive oil and 1 clove garlic.  Set aside.

3.  Brush steak with 2 T. olive oil and spread remaining garlic over that. Generously grind pepper all over the steak, then salt well and spread the remaining herbs all over that.  Roll it lengthwise and tie with string in 4 places.

4.  Salt and grind pepper all over the outside, and rub with the herbs that you set aside in step 2.

5.  Grill, covered, until the center reaches 150, then remove and allow to stand for a few minutes covered with foil.

6.  Remove string, and slice, carefullly.

7.  Serve with grilled corn and pineapple!
